Danish chef wins the world sushi championship

Earlier this month Pepe Anevski, chef at the Copenhagen restaurant Umami, won the World Sushi Cup 2013.
The event took place just outside Tokyo in Japan, where Pepe Anevski competed against more than 17 of the world’s best sushi chefs from countries including Japan, Germany, USA and Sweden.
A minimum of five years’ experience as a chef in the sushi field was a criterion to enter the competition that featured the theme “The first…”. This left the chefs to define for themselves the source of inspiration for their dishes. Pepe Anevski impressed the judges by his reinterpretation of traditional Japanese sushi.
